THE SANTO CLASSIC MARGARITA
- 2 oz. Santo Blanco Tequila
- 1 oz. Cointreau
- 1 oz. lime juice
- Salt
*Optional:
- ½ oz. Of Damiana Herb Liqueur
- ¼ teaspoon agave or simple syrup
Directions: Mix all ingredients except the salt in a cocktail shaker filled with ice. Shake and strain into a cocktail glass with a salted rim.
Sammy’s Note: For a slightly sweeter margarita, use Key limes or Mexican limes – which are less acidic and make a better drink. This classic margarita comes out pretty sour (which I like) but the Key limes will naturally make the drink a little bit sweeter, with a pleasant tang. You can also add ½ ounce of Damiana (a Mexican aphrodisiac) to sweeten it up ever so slightly with a unique herbaceous flavor. If you want to kick it up, literally!
JALAPEÑO WATERMELON MARGARITA
- 1 ½ oz. Santo Blanco Tequila
- 2 oz. watermelon syrup
- 2 oz. sweet and sour
- ½ oz OJ
Directions: Combine all ingredients in a shaker with ice, shake and strain over ice. Serve in a rocks glass or brandy snifter. Garnish with watermelon and a jalapeño coin.
SANTO STRAWBERRY MARGARITA
- 1.5 oz. Santo Blanco Tequila
- 1 oz. Cointreau
- 1 oz. Strawberry syrup
- 2 oz. lime juice
- 1 oz. simple syrup
- 3 cut strawberries
Directions: Combine all ingredients in a shaker, shake with ice, and strain over ice. Serve in a rocks glass or brandy snifter. Garnish with strawberries and a lime wheel.
MARGARITA DAY CUPCAKES
Cupcakes: (makes 12 cupcakes)
- 1 ½ cup flour
- 1 ½ tsp baking powder
- ¾ tsp salt
- ½ cup unsalted butter room temperature
- 1 cup sugar
- 2 eggs room temperature
- 2 Tbsp lime zest
- ¼ cup lime juice
- 2 Tbsp Santo Tequila Blanco
- 2 Tbsp Triple Sec
- 1 tsp vanilla
- ½ tsp lemon extract
- ½ cup buttermilk
Glaze:
- 1 Tbsp Santo Tequila Blanco
- ½ Tbsp Triple Sec
- 1 Tbsp lime juice
- 1 Tbsp powdered sugar
Icing:
- 1 cup unsalted butter room temperature
- 3 cups powdered sugar
- 1 Tbsp lime zest
- 2 Tbsp Santo Tequila Blanco
- 1 Tbsp Triple Sec
- 2 Tbsp heavy cream
- Pinch of salt
Directions: Preheat oven to 325 degrees. Line muffin tin with paper liners. Sift together flour, baking powder, salt. Cream butter and sugar. Add eggs 1 at a time, mix well after each addition. Add lime zest, lime juice, tequila, triple sec, vanilla, lime extract. Add dry ingredients in 3 batches alternating with buttermilk. Mix only until combined. Divide batter between muffin cups. Bake approximately 20-25 min. until toothpick shows only moist crumbs. Brush the tops of cupcakes with glaze. Allow cupcakes to cool 10 min. in the pan, then remove to cooling rack.
For icing: cream butter and sugar together. Add zest, tequila, triple sec, add in cream and beat approximately 5 min. more until light and fluffy. Pipe or spread icing on cooled cupcakes. Garnish with lime slices or zest. Enjoy!
