The weather outside may be cold and dreary at times, but these two delicious and toasty rosé-based recipes will keep you warm and cozy all season long. The Mulled Rosé All Day and Winter’s Rosé cocktail can be made at home or you can enjoy the Winter’s Rosé cocktail at SoHo’s Bar Hugo.
Mulled Rosé All Day
- One bottle Rosé All Day
- 1/4th pink grapefruit
- 5 allspice berries
- 1-star anise
- 2 tablespoons honey
- 1 cinnamon stick
Pour the rosé wine into a large saucepan with the star anise, stem ginger, black peppercorns, allspice berries, and pink grapefruit. Bring to a simmer over medium heat, strain into a jug then serve in heatproof glasses or cups.
Tasting notes are sweet wintery spice with a pleasant tartness from the grapefruit.
Winter’s Rosé
Created by Bar Hugo Bar Manager, Kevin Montaño, this warm libation makes for a perfect batched beverage on a chilly day, particularly if you’re missing rosé season. Yields 16–18 drinks.
- 3 bottles dry rosé
- 4 oz apple cider
- 2 oz Grand Marnier
- 9 t brown sugar
- 4 t honey clover
- 8 cinnamon sticks
- 1 t orange zest+ 1 orange, cut into thick slices
- 2 t lemon zest+ juice of 1 lemon
- 1 vanilla bean pod or 4 t vanilla extract
- 1 arm ginger root
- 3 lemongrass sticks
- 2 red apples, cored and sliced
- 1 t whole cloves
- 6-star anise
Combine all ingredients in a large saucepot. Simmer over low heat for a minimum of 30 minutes, stirring occasionally. Optional Garnish: cinnamon stick, orange peel/slice, star anise
